Seared Cod Fillet with Lemon Garlic Asparagus
Enjoy a light yet satisfying dinner featuring a perfectly seared cod fillet paired with tender lemon garlic asparagus. The cod is seared to achieve a delicate crispy exterior while maintaining its moist, flaky interior. Fresh lemon juice and garlic elevate the flavors, creating a dish that’s both vibrant and nutritious.
INGREDIENTS
8 oz Cod Fillet (227g)
10 Asparagus Spears (134g)
1.5 tsp Olive Oil (7g)
1 Garlic Clove
1 tbsp Lemon Juice
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Pat the cod fillet dry with a paper towel and season both sides with a pinch of salt and black pepper.
Heat a non-stick skillet over medium-high heat and add 1.5 teaspoons of olive oil.
Add the cod fillet to the skillet skin side down (if applicable) and sear for approximately 3-4 minutes until a golden crust forms. Flip and cook for another 3-4 minutes until the fish is opaque and flakes easily with a fork.
While the cod is searing, trim the woody ends off the asparagus and place them in a separate pan. Add a splash of water, the garlic (lightly smashed) and a pinch of salt, then sauté over medium heat for about 3-4 minutes until tender-crisp.
Remove the garlic clove from the asparagus and drizzle with lemon juice.
Plate the seared cod fillet alongside the lemon garlic asparagus and serve immediately.
