Savor the crispy, seasoned pork chops paired with tender caramelized sweet potatoes and a refreshing, tangy feta yogurt sauce. This dish brings together a harmony of textures and flavors for a satisfying meal that’s both nutritious and irresistibly delicious.
INGREDIENTS
4 oz Pork Chop
1/2 medium Sweet Potato
1/4 cup Plain Nonfat Greek Yogurt
1/2 oz Feta Cheese
1 tsp Olive Oil
2 cloves Garlic
1 tbsp Fresh Thyme
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Season the pork chop with salt and pepper on both sides.
Heat olive oil in a skillet over medium-high heat. Sear the pork chop for 3-4 minutes per side until a golden crust forms.
Transfer the pork chop to a baking sheet and place in the oven. Roast for an additional 8-10 minutes or until cooked through.
While the pork is roasting, peel and cube the sweet potato. In a small pan, sauté the garlic in a tiny drizzle of olive oil until aromatic.
Add the cubed sweet potatoes and fresh thyme to the pan along with a pinch of salt. Cook over medium heat, stirring occasionally, until the sweet potatoes are tender and caramelized, about 10 minutes.
For the sauce, in a bowl combine plain nonfat Greek yogurt and crumbled feta cheese. Mix well and season with a pinch of salt and pepper.
Plate the pork chop alongside the sweet potatoes and drizzle or dollop the creamy feta yogurt sauce over the top.
Serve immediately and enjoy this balanced, flavorful dish.
