INGREDIENTS
6 oz Lean Ground Turkey
1 large Bell Pepper
1/4 cup chopped Onion
1/4 cup Diced Tomatoes
1 tsp Extra Virgin Olive Oil
1/4 cup shredded Low-Fat Mozzarella Cheese
1 Garlic clove
Salt and Pepper to taste
PREPARATION
Preheat the oven to 375°F.
Cut the top off the bell pepper and remove seeds and membranes.
In a skillet over medium heat, add the olive oil and sauté the chopped onion and minced garlic until softened, about 2-3 minutes.
Add the lean ground turkey to the skillet and cook until it is browned and fully cooked through, breaking it up into small pieces as it cooks.
Stir in the diced tomatoes, and season with salt and pepper. Let the mixture simmer for another 2 minutes.
Stuff the bell pepper with the turkey mixture, then top with shredded low-fat mozzarella cheese.
Place the stuffed pepper on a baking dish and bake in the preheated oven for 15-20 minutes, or until the cheese has melted and the pepper is tender.
Remove from the oven and serve warm.
