INGREDIENTS
2 x 100g Chicken Sausage (total 200g)
1 x 100g Sweet Potato
1 x Whole Egg
2 x Egg Whites
½ cup Red Bell Pepper, chopped
¼ medium Red Onion, chopped
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Peel and dice the sweet potato into small cubes. Roughly chop the red bell pepper and red onion.
Slice the chicken sausage into rounds.
Heat a non-stick oven-safe skillet over medium heat and add the olive oil. Sauté the sweet potato cubes for about 5 minutes until they begin to soften.
Add the red bell pepper and red onion to the skillet and continue to sauté for another 3-4 minutes until the vegetables are slightly tender.
Mix in the sliced chicken sausage and cook for an additional 3 minutes, allowing the flavors to meld and the sausage to heat through.
Make small wells in the hash and gently crack one whole egg and add two egg whites into the wells. Season with salt and pepper.
Transfer the skillet to the oven and bake for 8-10 minutes, or until the eggs reach your desired level of doneness.
Carefully remove the skillet from the oven, serve warm, and enjoy your nutrient-packed hash.
