INGREDIENTS
3 cups Fresh Spinach (90g)
1/3 cup Crumbled Feta Cheese (50g)
3 Large Eggs
2 Phyllo Dough Sheets (60g)
1 tsp Olive Oil
1 tbsp Fresh Dill (chopped)
1 tbsp Fresh Parsley (chopped)
1/2 tsp Garlic Powder
Salt and Pepper to taste
PREPARATION
Preheat your oven to 375°F (190°C) and lightly grease a small baking dish.
In a bowl, whisk the eggs with a pinch of salt and pepper. Stir in the chopped dill, parsley, and garlic powder.
Gently fold in the fresh spinach and crumbled feta, ensuring an even distribution of ingredients.
Lay one sheet of phyllo dough in the baking dish. Brush lightly with olive oil. Place the second sheet on top and brush again with olive oil.
Evenly spread the spinach, feta, and egg mixture over the phyllo sheets.
Fold the edges of the phyllo over the filling to create a rustic enclosed bake.
Bake in the preheated oven for 20-25 minutes or until the phyllo is golden and crispy and the egg mixture is set.
Remove from the oven and allow to cool slightly before cutting into pieces. Enjoy warm.
