Enjoy a savory and colorful dish featuring lean ground beef roasted inside a sweet bell pepper, complemented by hearty black beans and melted low-fat cheddar. This balanced creation offers a delightful mix of textures and a burst of flavors from aromatic spices and fresh vegetables.
INGREDIENTS
4 oz Lean Ground Beef
1 medium Bell Pepper
1/2 cup Black Beans (drained & rinsed)
1 oz Low-Fat Cheddar Cheese, shredded
1/4 cup chopped Onion
1 clove Garlic, minced
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Slice the top off the bell pepper and remove the seeds and membranes. Set aside the pepper.
In a non-stick skillet, heat the olive oil over medium heat. Sauté the chopped onion and minced garlic until fragrant and softened, about 3-4 minutes.
Add the lean ground beef to the skillet, breaking it apart as it cooks. Season with salt and pepper and cook until browned, about 5-6 minutes.
Stir in the black beans into the beef mixture and allow it to heat through for about 2 minutes.
Fill the hollowed bell pepper with the beef and bean mixture. Sprinkle the shredded low-fat cheddar evenly on top.
Place the stuffed bell pepper in a baking dish and roast in the preheated oven for about 15-20 minutes, until the pepper is tender and the cheese is melted.
Remove from the oven and let cool for a few minutes before serving.
