INGREDIENTS
6 oz Chicken Breast
1 tsp Olive Oil for chicken
2 Tbsp Mixed Fresh Herbs
1 medium Russet Potato
1 clove Garlic
1/4 cup Skim Milk
5 g Butter
1 cup Green Beans
1 tsp Olive Oil for green beans
PREPARATION
Preheat the oven to 425°F.
Pat the chicken breast dry and rub with 1 tsp olive oil. Sprinkle with mixed fresh herbs, salt, and pepper to taste.
Place the seasoned chicken on a baking sheet lined with parchment paper and bake for 20-25 minutes or until cooked through.
Meanwhile, peel and cube the russet potato. Boil in salted water until tender, around 15-20 minutes.
In a small saucepan, gently heat the garlic with a tiny splash of water until fragrant, then add it to the drained potatoes along with the 1/4 cup skim milk and 5g of butter. Mash until smooth and creamy. Season with salt and pepper.
Trim the ends of the green beans and toss them with 1 tsp olive oil, salt, and pepper. Spread them on a separate baking sheet and roast in the oven for 10-12 minutes until tender and slightly crisp.
To serve, plate the herb-crusted chicken with a side of creamy garlic mashed potatoes and the roasted green beans. Enjoy your balanced and delicious meal.
