INGREDIENTS
8 Egg Whites (approx. 240g)

1/2 medium Red Bell Pepper (approx. 60g)

PREPARATION
Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
Add sliced chicken sausage and cook until lightly browned, about 3-4 minutes. Remove from the skillet and set aside.
In the same skillet, add the remaining olive oil. Toss in the red bell pepper slices and sauté for 1-2 minutes until slightly softened.
Add the spinach and cook until just wilted, about 1 minute.

Return the cooked chicken sausage to the skillet. Mix well and cook until the egg whites are fully set.
Season with salt and pepper to taste, then serve immediately.
