INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1.5 teaspoons Olive Oil
1 Garlic Clove
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat and add half of the olive oil (approximately 0.75 tsp).
Place the salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes, then flip and cook for another 3-4 minutes until cooked through and lightly crisp.
Meanwhile, steam the asparagus in a steamer basket over boiling water for 4-5 minutes until tender but still crisp. Season with a pinch of salt and pepper.
In a small pot, steam the cauliflower florets for about 8-10 minutes until soft.
In a bowl, mash the steamed cauliflower along with the garlic clove (minced or lightly crushed), the remaining olive oil, and a pinch of salt and pepper until smooth and creamy.
Plate the seared salmon alongside the steamed asparagus and a generous serving of garlic mashed cauliflower. Serve warm.
