PREPARATION
Prepare the mashed potatoes by peeling and cubing the potato. Boil in lightly salted water until tender, about 15-20 minutes.
Once cooked, drain the potatoes and mash them with butter, milk, and chopped fresh parsley. Season with salt and pepper, then set aside and keep warm.
