Enjoy a vibrant, satisfying stir-fry featuring crispy tofu and edamame combined with an assortment of fresh vegetables. This dish offers a delightful balance of textures and flavors with a hint of ginger and garlic, tossed lightly in a sesame-soy dressing.
INGREDIENTS
300g Extra Firm Tofu
100g Shelled Edamame
1 medium Red Bell Pepper (≈150g)
100g Broccoli Florets
1 medium Carrot (≈80g)
2 cloves Garlic
1 tsp Fresh Ginger
1 tsp Sesame Oil
1 tbsp Soy Sauce
1 tbsp Cornstarch
PREPARATION
Press the tofu gently between paper towels to remove excess moisture and cut it into bite-sized cubes.
In a bowl, toss the tofu cubes with cornstarch until evenly coated.
Heat the sesame oil in a non-stick pan over medium-high heat. Once hot, add the tofu and sauté until all sides are crispy and golden, about 6-8 minutes. Remove and set aside.
In the same pan, add minced garlic and grated ginger, stirring for about 30 seconds until aromatic.
Add chopped red bell pepper, broccoli florets, and sliced carrot to the pan. Stir-fry the vegetables for about 4-5 minutes until crisp-tender.
Return the crispy tofu to the pan along with the shelled edamame. Drizzle with soy sauce and toss everything together until evenly coated and warmed through.
Serve immediately and enjoy your balanced, protein-packed stir-fry.
