PREPARATION
Preheat your oven to 400°F.
Pat the pork tenderloin dry and season generously with salt and pepper.
Heat olive oil in an oven-safe skillet over medium-high heat. Sear the pork on all sides until golden brown, about 2-3 minutes per side.
While the pork is searing, peel and cube the sweet potato into 1-inch pieces. Season lightly with salt and a drizzle of olive oil.
In a small bowl, whisk together honey and Dijon mustard to create the glaze.
Once the pork is seared, brush half of the glaze over it. Add the sweet potato cubes to the skillet around the pork.
