INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 tsp Olive Oil (for green beans)
1 cup Cauliflower
1 tbsp Unsweetened Almond Milk
1 tsp Olive Oil (for mash)
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down (if applicable). Sear for about 3-4 minutes on each side until cooked to your desired doneness.
While the salmon is cooking, trim the green beans and mince the garlic. In a separate pan, add 1 teaspoon of olive oil and sauté the garlic for about 30 seconds until fragrant, then add the green beans. Sauté for 4-5 minutes until tender but still crisp. Season with salt and pepper.
For the cauliflower mash, steam or boil the cauliflower florets until very soft, about 8-10 minutes. Drain and transfer to a bowl.
Add 1 tablespoon of unsweetened almond milk and 1 teaspoon of olive oil to the steamed cauliflower. Mash until smooth. Season with salt and pepper to taste.
Plate the seared salmon alongside the garlic green beans and cauliflower mash. Serve immediately.
