Salt & Pepper to taste
PREPARATION
Preheat the oven to 425°F.
Wash and trim the green beans. Toss them with 1 tsp olive oil, salt, and pepper.
Cut the sweet potato in half (if using a medium potato, use one half). Toss lightly with a pinch of salt and a few drops of olive oil, then set aside.
Spread the green beans and sweet potato on a baking sheet and roast in the oven for 20-25 minutes until tender and slightly caramelized, stirring halfway through.
Meanwhile, pat the salmon dry with a paper towel and season both sides with salt and pepper.
Heat 1 tsp olive oil in a non-stick pan over medium-high heat. Once hot, place the salmon skin-side down and cook for about 4-5 minutes until the skin is crispy.
