INGREDIENTS
300g Extra Firm Tofu
50g Shelled Edamame
50g Broccoli Florets
50g Red Bell Pepper
50g Carrot
50g Zucchini
1 tsp Sesame Seeds
1 tbsp Light Soy Sauce
1 tsp Rice Vinegar
1 tsp Fresh Grated Ginger
1 clove Garlic, minced
0.5 tbsp Olive Oil
1 tsp Cornstarch
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
In a bowl, gently toss the tofu cubes with cornstarch until evenly coated.
Heat the olive oil in a non-stick pan over medium-high heat. Add the tofu and fry until the edges are crispy and golden on all sides, then remove from the pan and set aside.
In the same pan, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
Add broccoli, red bell pepper, carrot, zucchini, and edamame. Stir-fry the vegetables for 3-4 minutes until they are tender-crisp.
Return the crispy tofu to the pan. Drizzle soy sauce and rice vinegar over the mixture and toss gently to combine.
Sprinkle sesame seeds over the stir-fry and cook for an additional minute to let the flavors meld.
Serve immediately while hot, enjoying the vibrant mix of textures and flavors.
