PREPARATION
Preheat a non-stick skillet over medium heat and add the olive oil.
Dice the sweet potato into small cubes. Sauté the sweet potato cubes in the olive oil for about 5-7 minutes until they begin to soften.
Add the turkey bacon slices to the skillet and cook until they are crispy, roughly 3-4 minutes on each side. Remove and set aside, then chop into bite-sized pieces.
