INGREDIENTS
1 Salmon Fillet (6 oz / 170g)
1 cup Green Beans (125g)
1 cup Cauliflower (107g)
1/4 cup Nonfat Greek Yogurt (60g)
1 tbsp Olive Oil
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Prep the salmon by patting it dry and seasoning both sides with salt and pepper.
Heat the olive oil in a skillet over medium-high heat. Once hot, add the salmon fillet skin-side down and sear for about 3-4 minutes until a crust forms, then flip and cook for an additional 3-4 minutes until cooked through.
While the salmon is cooking, trim the green beans and steam them until just tender, about 4-5 minutes.
For the garlic mashed cauliflower, steam the cauliflower florets with garlic cloves until they are soft (about 8-10 minutes). Transfer to a blender or bowl and blend/mash with the nonfat Greek yogurt until smooth, seasoning with salt and pepper to taste.
Plate the salmon with a side of steamed green beans and a serving of garlic mashed cauliflower. Serve warm and enjoy!
