INGREDIENTS
6 oz Salmon Fillet
1/2 cup cooked Brown Rice
1/2 medium Red Bell Pepper
1/4 cup Cucumber
1/4 cup Shredded Carrots
1 tsp Olive Oil
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides lightly with salt and pepper.
Heat olive oil in a non-stick pan over medium-high heat. Once hot, add the salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes until a golden crust forms.
Flip the salmon carefully and cook the other side for an additional 3-4 minutes until the salmon is just cooked through and flakes easily.
While the salmon is cooking, prepare the bowl by placing the cooked brown rice at the base.
Dice the red bell pepper, cucumber, and lightly toss with the shredded carrots to create the crunchy vegetable mix.
Drizzle the lemon juice over the vegetables and toss to coat evenly.
Once the salmon is done, gently flake it into large, chunky pieces and arrange on top of the rice, then top with the vegetable mix.
Finish with an additional light sprinkle of salt and pepper if needed and serve immediately.
