INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower florets
2 cloves Garlic
1 tsp Butter
1 tsp Olive Oil
1 tbsp Plain Greek Yogurt
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, sear the salmon fillet skin-side down for about 3-4 minutes and then flip, cooking for another 3-4 minutes until the salmon is just cooked through.
Meanwhile, steam the green beans and cauliflower florets until tender, about 5-7 minutes. Reserve a few minutes of the steaming water.
In a saucepan, combine the steamed cauliflower with minced garlic and a teaspoon of butter. Blend or mash until smooth, adding a splash of the reserved water if needed for creaminess. Season with salt and pepper.
Toss the steamed green beans with a teaspoon of olive oil and a pinch of salt, and, if desired, lightly sauté them in a pan for extra flavor after steaming.
Plate the cauliflower mash as a bed, then place the seared salmon on top. Arrange the green beans on the side.
Top the salmon or cauliflower mash with a tablespoon of plain Greek yogurt as a refreshing finish. Serve immediately.
