INGREDIENTS
1 medium Russet Potato (150g)
4 ounces Lean Ground Turkey (113g)
1 cup Broccoli (91g)
2 tablespoons Nonfat Greek Yogurt (30g)
1 teaspoon Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat the oven to 400°F.
Wash the potato, prick several times with a fork, and rub lightly with olive oil. Season with a pinch of salt.
Place the potato directly on the oven rack and bake for about 45 minutes or until the skin is crispy and the inside is tender.
While the potato bakes, preheat a skillet over medium heat and add the lean ground turkey. Season with salt and pepper, and cook, breaking it up with a spatula, until fully browned and cooked through, about 7-10 minutes.
At the same time, toss the broccoli with a small drizzle of olive oil, salt, and pepper and spread on a baking sheet. Roast in the oven for about 15-20 minutes until tender with slightly crispy edges.
Once all components are ready, slice the baked potato open, fluff the interior, and top with the cooked ground turkey.
Add the roasted broccoli on the side and finish with a dollop of nonfat Greek yogurt on top.
Serve warm and enjoy your balanced, nutritious meal.
