INGREDIENTS
1 medium Sweet Potato
2 large whole Eggs
2 large Egg Whites
3 ounces Lean Turkey Sausage
1/2 cup diced Red Bell Pepper
1/4 cup diced Red Onion
1 teaspoon Olive Oil
2 tablespoons Fresh Mixed Herbs (Parsley & Basil)
Salt & Pepper to taste
PREPARATION
Preheat a non-stick skillet over medium heat and add the olive oil.
Dice the sweet potato into small cubes. Add to the skillet and cook for about 8-10 minutes until they begin to soften and get crispy edges.
Add the diced red bell pepper and red onion to the skillet. Sauté for 3-4 minutes until the vegetables are tender and slightly caramelized.
Slice the lean turkey sausage into rounds and add to the skillet. Sauté for an additional 2-3 minutes until heated through.
In a bowl, whisk together the whole eggs and egg whites. Season lightly with salt and pepper.
Pour the egg mixture over the vegetables and sausage in the skillet. Allow the eggs to set for a minute before gently stirring to combine with the hash. Cook until the eggs are just set but still moist.
Remove from heat and sprinkle with freshly chopped mixed herbs.
Serve immediately while warm, adjusting salt and pepper to taste.
