Shape the turkey mixture into a log about 4-5 inches long. Lay the prosciutto slices flat on a clean surface and gently wrap them around the turkey log, overlapping slightly to cover the meat.
Place the prosciutto-wrapped turkey log on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes or until the internal temperature reaches 165°F.
While the meatloaf is baking, prepare the green beans. Toss the green beans with olive oil, a pinch of salt and pepper, and a little garlic powder if desired. Spread the green beans on another baking sheet in a single layer.
Roast the green beans in the oven for about 12-15 minutes, stirring halfway through, until they are tender and lightly browned.
Once cooked, slice the meatloaf log into medallions and garnish with fresh parsley. Serve alongside the roasted green beans.
