INGREDIENTS
6 oz Salmon Fillet
6 Asparagus Spears
1 cup Cauliflower (chopped)
1 tsp Olive Oil
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry with a paper towel and season generously with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side down and sear for about 4-5 minutes until the skin is crispy.
Flip the salmon carefully and cook for an additional 3-4 minutes on the other side until the salmon is just cooked through. Remove from heat and set aside.
While the salmon cooks, trim the woody ends of the asparagus and steam them for about 4-5 minutes until just tender but still vibrant and slightly crisp.
In a pot, steam the cauliflower along with one peeled garlic clove for 8-10 minutes until soft. Drain well and transfer to a bowl.
Add the olive oil to the steamed cauliflower and garlic, then mash until smooth and season with salt and pepper to taste.
Plate the salmon alongside the steamed asparagus and a generous side of cauliflower mash. Serve immediately.
