INGREDIENTS
200 grams White Button Mushrooms
8 ounces Large Shrimp, peeled and deveined
1 tablespoon Unsalted Butter
3 cloves Garlic
2 tablespoons Fresh Parsley
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat the oven to 400°F. Place the garlic cloves (in their skins) on a piece of foil, drizzle lightly with a tiny bit of olive oil if desired, wrap in foil and roast in the oven for about 15 minutes until soft and aromatic.
While the garlic roasts, clean and slice the mushrooms, and pat the shrimp dry.
Melt the butter in a large skillet over medium heat. Once melted, add the roasted garlic (squeeze the soft garlic out of its skin) and sauté briefly to infuse the butter.
Add the mushrooms to the skillet and cook for 4-5 minutes until they start to brown and soften.
Add the shrimp to the pan and continue cooking for another 3-4 minutes, stirring occasionally until the shrimp turn pink and are cooked through.
Season the dish with a pinch of salt and black pepper. Stir in fresh parsley at the end for a burst of color and freshness.
Serve hot as a hearty meal that works for breakfast, lunch, or dinner.
