Seared Salmon with Garlic Green Beans and Cauliflower Mash
Enjoy a beautifully balanced dinner featuring a perfectly seared salmon fillet paired with crisp garlic-infused green beans and a creamy cauliflower mash accented with a touch of nutritional yeast and butter for richness.
INGREDIENTS
5.5 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower (cooked)
1 tbsp Nutritional Yeast
1 tsp Olive Oil
1/2 tbsp Unsalted Butter
1 Garlic Clove
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat and add olive oil. Sear the salmon, skin-side down if applicable, for about 3-4 minutes per side until nicely browned and cooked to your liking.
While the salmon is searing, steam or boil the cauliflower until soft. Drain well.
In a separate pan, lightly sauté the minced garlic in a tiny drizzle of olive oil until fragrant, then add the green beans. Sauté for about 3-4 minutes until they are tender-crisp. Season with salt and pepper.
Mash the cooked cauliflower with unsalted butter and nutritional yeast until creamy. If desired, adjust seasoning with salt and pepper.
Plate the seared salmon alongside a serving of garlic green beans and a generous portion of cauliflower mash. Serve immediately and enjoy!
