150g Lean Ground Turkey
1 large Bell Pepper (approx 150g)
1/4 cup diced Onion (approx 40g)
1/4 cup diced Tomato (approx 40g)
1 clove minced Garlic
1/4 cup Cooked Quinoa (approx 43g)
1 tsp Olive Oil
Salt & Pepper to taste
Cumin & Paprika to taste
PREPARATION
Preheat your oven to 375°F (190°C).
Slice the top off the bell pepper and carefully remove the seeds and membranes.
In a non-stick pan, heat olive oil over medium heat. Add the diced onions and minced garlic; sauté until softened, about 2 minutes.
Add the lean ground turkey to the pan and cook until it is no longer pink, breaking it up with a spatula as it cooks. Season with salt, pepper, cumin, and paprika.
Stir in the diced tomatoes and cooked quinoa. Allow the mixture to heat through for another 2 minutes and adjust seasoning as needed.
Spoon the turkey mixture into the hollowed-out bell pepper, packing it well.
