PREPARATION
Begin by boiling the russet potato (120g) in salted water until fork-tender. Drain and mash with minced garlic and a sprinkle of salt and pepper. Set aside keeping warm.
Pat the 6 oz salmon fillet dry and season both sides with salt, pepper, and finely chopped thyme leaves.
