Savor the delightful harmony of crispy sweet potato hash paired with savory eggs and a refreshing side of fresh berries. This easy-to-make dish combines warm, spiced vegetables with lean turkey sausage and a light drizzle of olive oil to perfectly complement the naturally sweet flavors of roasted sweet potatoes. A little extra egg white boosts the protein while keeping it light, making it an ideal meal for any time of day.
INGREDIENTS
1 small Sweet Potato (150g)
3 large Eggs
1 large Egg White
50g Lean Turkey Sausage
1/2 cup diced Red Bell Pepper (75g)
1/4 cup diced Onion (40g)
1 tsp Olive Oil (5g)
1/2 cup Mixed Fresh Berries (75g)
PREPARATION
Peel and dice the sweet potato into small cubes. Rinse the red bell pepper and onion, then dice them finely.
Heat one teaspoon of olive oil in a medium skillet over medium heat. Add the diced sweet potato, and sauté for about 8-10 minutes until they begin to soften.
Add the diced red bell pepper and onion to the skillet and continue to sauté until the vegetables are tender and slightly charred around the edges, approximately 3-4 minutes.
While the hash is cooking, slice the turkey sausage into rounds and add to the skillet, cooking for an additional 2-3 minutes.
In a separate bowl, whisk together the eggs and the extra egg white. Pour the mixture over the hash in the skillet, stirring gently to combine with the vegetables and sausage. Cook until the eggs are softly scrambled and just set.
Plate the hash with eggs, and serve with a side of fresh mixed berries.
Enjoy your balanced and flavorful meal!
