A robust and comforting dish that melds savory lean ground beef with tender sweet potato cubes, aromatic onions, and fresh spinach, finished with a perfectly cooked egg. This hearty hash is both satisfying and balanced, offering a delightful mix of textures and flavors to energize your day.
INGREDIENTS
5 oz Lean Ground Beef
1 medium Sweet Potato
1/2 cup Onion, diced
1 cup Spinach
1 large Egg
1 tsp Olive Oil
1 clove Garlic
PREPARATION
Peel and dice the sweet potato into small cubes. Dice the onion and mince the garlic.
Heat the olive oil in a large skillet over medium heat. Sauté the diced onion and minced garlic until they start to soften, about 2-3 minutes.
Add the lean ground beef to the skillet. Cook until browned, breaking it apart with a spoon, for about 5-7 minutes.
Once the beef is nearly done, add the sweet potato cubes. Stir well to combine and cook until the sweet potatoes are tender, approximately 8-10 minutes.
Stir in the spinach and cook until wilted, about 2 minutes.
In a separate pan, cook the egg to your preference (fried or poached) and then place it on top of the hash.
Season with salt and pepper to taste, and serve warm.
