Enjoy a vibrant stir-fry featuring crispy, golden tofu tossed with an assortment of colorful vegetables, all enveloped in a light, savory sesame soy sauce. The dish offers exciting textures and a balanced flavor profile with a subtle hint of ginger and garlic.
INGREDIENTS
350g Firm Tofu
75g Shelled Edamame
1 cup Broccoli (91g)
0.5 cup Red Bell Pepper (75g)
0.5 cup Snap Peas (50g)
1 small Carrot (50g)
1 tbsp Cornstarch
1 tsp Sesame Oil
1 tbsp Low Sodium Soy Sauce
1 tsp Sesame Seeds
1 clove Garlic
1 tsp Fresh Ginger
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture. Once pressed, cut the tofu into bite-sized cubes and gently toss them with cornstarch to coat evenly.
In a non-stick pan, heat the sesame oil over medium-high heat. Add the tofu and sauté until golden and crispy on all sides, about 5-7 minutes. Remove and set aside.
In the same pan, add minced garlic and grated ginger, cooking briefly until fragrant.
Add the broccoli, bell pepper, snap peas, and sliced carrot to the pan. Stir-fry the vegetables until just tender but still crisp, about 3-4 minutes.
Return the crispy tofu to the pan along with the shelled edamame. Drizzle with low sodium soy sauce and toss everything gently to combine.
Sprinkle sesame seeds over the dish and stir for an additional minute to allow the flavors to meld.
Serve immediately, enjoying the harmonious blend of crispy tofu and vibrant vegetables.
