0.75 cup Low-Fat Cottage Cheese
0.5 cup Spinach
1 medium Tomato

Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F.
Rinse and drain the white beans if using canned. In a mixing bowl, combine the white beans with low-fat cottage cheese.
Finely mince the garlic and gently sauté it in olive oil for 1-2 minutes until fragrant.
Chop the tomato, spinach, basil, and oregano. Add these to the bean mixture along with the sautéed garlic and oil.
Season the mixture with salt and pepper and gently mix until well combined.
