Enjoy a refreshing dinner featuring a perfectly seared salmon fillet paired with lightly steamed asparagus and a creamy garlic mashed cauliflower. This dish blends tender, flavorful fish with a comforting, low-carb side that sparks both simplicity and elegance in every bite.
INGREDIENTS
6 oz Salmon Fillet
6 Asparagus Spears
1 cup Cauliflower, chopped
1 tsp Olive Oil
1 Clove Garlic
1 tbsp Grated Parmesan Cheese
Salt and Pepper to taste
PREPARATION
Season the salmon fillet lightly with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat with the olive oil. Once hot, place the salmon skin-side down (if applicable) and sear for about 3-4 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until just cooked through.
While the salmon is searing, set up a steamer and add the asparagus spears. Steam them for about 4-5 minutes until tender-crisp.
For the garlic mashed cauliflower, steam or boil the chopped cauliflower until very tender, about 8-10 minutes. Drain well.
In a bowl, mash the cauliflower together with the minced garlic, grated parmesan cheese, a pinch of salt and pepper. For a creamier texture, you can add a little water or reserved cauliflower cooking liquid.
Plate the seared salmon alongside the steamed asparagus and a serving of garlic mashed cauliflower. Serve immediately and enjoy your balanced dinner.
