INGREDIENTS
5 oz Chicken Breast (141g)
1 medium Sweet Potato (114g)
0.5 tbsp Extra Virgin Olive Oil
0.25 cup Nonfat Greek Yogurt (60g)
Salt, pinch
Black Pepper, pinch
PREPARATION
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Pat the chicken breast dry and season with a pinch of salt and black pepper.
Place the chicken on the baking sheet and drizzle a little olive oil over it. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the exterior is slightly crispy.
Meanwhile, peel and cube the sweet potato. Boil or steam the cubes in lightly salted water until soft, about 15 minutes.
Drain the sweet potato and return to the pot. Add the remaining olive oil, a pinch of salt, and the nonfat Greek yogurt. Mash until smooth and creamy.
Plate the crispy chicken alongside a generous serving of the creamy sweet potato mash. Enjoy while hot.
