Healthy Fluffy Caramelized Banana Pancakes
Enjoy a delightful stack of light and fluffy banana pancakes with a touch of caramelized goodness. The natural sweetness of caramelized banana pairs perfectly with the subtle hints of cinnamon and vanilla, making this dish a nourishing and satisfying meal that feels both indulgent and healthy.
INGREDIENTS
1 medium Banana (118g)
1/2 cup Rolled Oats (40g)
1 large Egg (50g)
1 cup Nonfat Greek Yogurt (245g)
1 tsp Maple Syrup (7g)
1 tsp Vanilla Extract (5g)
1/2 tsp Cinnamon (1.3g)
1 tsp Baking Powder (4g)
PREPARATION
In a small saucepan, add the banana and a teaspoon of maple syrup. Warm over low heat until the banana softens slightly and starts caramelizing, about 3-4 minutes. Mash the banana lightly as it heats.
In a blender, combine the rolled oats, egg, nonfat Greek yogurt, vanilla extract, cinnamon, and baking powder. Blend until the mixture is smooth and nearly batter-like.
Stir in the caramelized banana, ensuring it's well distributed throughout the batter.
Preheat a non-stick skillet over medium heat. Once warm, lightly spray with cooking spray or add a tiny drop of oil.
Pour approximately 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges begin to look set, about 2-3 minutes.
Flip the pancake gently and cook for another 2 minutes on the opposite side until golden brown.
Repeat with the remaining batter. Serve the pancakes warm. Optionally, drizzle a tiny bit more maple syrup on top for extra sweetness.
