3 large eggs
1 small sweet potato (approx 150g), diced
½ cup diced red bell pepper
¼ medium yellow onion, diced
1 teaspoon olive oil
Salt & Pepper to taste
Pinch of smoked paprika
PREPARATION
Preheat your oven to 400°F.
Peel (if desired) and dice the sweet potato into small cubes. Dice the red bell pepper and yellow onion.
Heat a skillet over medium heat and add the olive oil. Sauté the diced onion and red bell pepper until they begin to soften, about 3-4 minutes.
Add the diced sweet potato to the skillet. Season with a pinch of salt, pepper, and smoked paprika. Cook stirring occasionally for about 8-10 minutes until the sweet potatoes start to become tender and crisp on the edges.
While the vegetables cook, slice the chicken sausage links into rounds. Add them to the skillet and sauté for an additional 4-5 minutes until they are heated through and slightly crispy.
