INGREDIENTS
5 oz Chicken Breast
1 medium Sweet Potato
1/2 medium Red Bell Pepper
1/4 medium Yellow Onion
1 tsp Olive Oil
1 tbsp Mixed Fresh Herbs
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Preheat a large skillet over medium-high heat.
Peel and dice the sweet potato into small cubes. Dice the red bell pepper and finely chop the yellow onion and garlic.
Season the chicken breast with salt, pepper, and chopped fresh herbs. Pat dry to help achieve a crispy exterior.
Add olive oil to the skillet. Sear the chicken breast on each side for about 3-4 minutes until golden brown. Remove the chicken and set aside.
In the same skillet, add the diced sweet potato, bell pepper, onion, and garlic. Sauté until the sweet potato is tender and slightly crispy, about 8-10 minutes. Stir occasionally to prevent sticking.
Slice the seared chicken breast into bite-size pieces and add it back to the skillet. Toss everything together and let it cook for an additional 2 minutes to meld the flavors.
Taste and adjust seasoning with additional salt, pepper, or fresh herbs if desired. Serve warm.
