INGREDIENTS
6 oz Sirloin Steak (~170g)
1 medium Potato (~150g)
1 cup raw Spinach (~30g)
1 clove Garlic
1 tsp Olive Oil (~5g)
0.5 tsp Fresh Rosemary
0.5 tsp Fresh Thyme
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F for the herb-roasted potatoes.
Wash the potato thoroughly and cut it into small cubes. Toss the cubes with olive oil, fresh rosemary, thyme, salt, and pepper.
Spread the potato cubes on a baking tray and roast in the oven for 20-25 minutes until golden and fork-tender.
While the potatoes roast, pat the 6 oz sirloin steak dry with paper towels. Season both sides generously with salt and pepper.
Heat a skillet over medium-high heat. Once hot, sear the steak for about 3-4 minutes on each side for medium-rare, or adjust time to your liking. Remove the steak from the skillet and let it rest.
In the same skillet, lower the heat to medium and add the chopped garlic. Sauté briefly until fragrant.
Add the raw spinach to the skillet with garlic and toss it quickly until just wilted, about 1-2 minutes. Season lightly with salt and pepper.
Plate the seared steak with a side of roasted herb potatoes and a serving of garlicky spinach. Serve immediately.
