Seared Salmon with Asparagus and Cauliflower Mash
Enjoy a delicate seared salmon paired with tender asparagus and a creamy cauliflower mash. The perfectly seared, slightly crispy salmon, accented by a hint of lemon and herbs, meets the light, velvety mash and crisp asparagus for a balanced, satisfying dinner that's both nutritious and flavor-packed.
INGREDIENTS
7 oz Salmon Fillet
6 spears Asparagus
1 cup Cauliflower
1 tsp Olive Oil
1/4 cup Unsweetened Almond Milk
1 clove Garlic
Salt & Pepper, to taste
1 tbsp Lemon Juice
PREPARATION
Pat the salmon fillet dry, then season both sides with salt and pepper.
Preheat a non-stick skillet over medium-high heat and add the olive oil.
Once the oil is hot, place the salmon skin-side down (if applicable) and sear for about 3-4 minutes until a nice crust forms, then flip and cook for an additional 3-4 minutes until the salmon is cooked through.
In the meantime, steam the asparagus until just tender, approximately 4-5 minutes, and set aside.
For the cauliflower mash, steam the cauliflower florets until very tender (about 8-10 minutes). In a blender or food processor, combine the steamed cauliflower, unsweetened almond milk, garlic, a pinch of salt and pepper, and lemon juice. Blend until smooth and creamy.
Plate the seared salmon alongside the asparagus and a generous serving of cauliflower mash, then finish with an extra drizzle of lemon juice if desired.
