Enjoy a savory twist on classic meatloaf with lean ground turkey accented by a smoky BBQ glaze and topped with perfectly crispy turkey bacon. This dish presents a hearty blend of flavors with a subtle hint of smoky spice, making it a versatile meal option for breakfast, lunch, or dinner.
INGREDIENTS
5 oz Lean Ground Turkey
1 large Egg
1/4 cup diced Onion
1 clove Garlic, minced
1 tbsp Almond Flour
1 tbsp Sugar-Free Ketchup
2 slices Turkey Bacon
1 tsp Smoked Paprika
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F and line a baking sheet with parchment paper.
In a large bowl, combine the lean ground turkey, egg, diced onion, minced garlic, almond flour, salt, pepper, and smoked paprika. Mix until just combined, being careful not to overwork the meat.
Shape the mixture into a compact loaf on the prepared baking sheet.
Spread the sugar-free ketchup evenly on top of the meatloaf to form a base for the glaze.
Bake in the preheated oven for about 25-30 minutes, or until the meatloaf is nearly cooked through.
While the meatloaf is baking, cook the turkey bacon in a small pan over medium heat until crispy.
About 5 minutes before the meatloaf is finished, place the crispy turkey bacon slices on top of the meatloaf and return it to the oven so the bacon adheres to the glaze.
Once cooked through and the bacon has set, remove the meatloaf from the oven, let it rest for a few minutes, then slice and serve.
