PREPARATION
Peel and dice the sweet potato into small cubes. Steam or microwave until tender, about 5-7 minutes.
While the sweet potato cooks, lightly sauté the turkey sausage in 1 tablespoon of olive oil in a skillet over medium heat, breaking it apart into pieces as it cooks. Once browned, remove and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil and toss in the fresh spinach. Sauté for about 1-2 minutes until wilted.
Add the pre-cooked sweet potato cubes and turkey sausage back into the skillet with the spinach and mix well.
