100g Prawns
50g Whole Wheat Pasta
1 cup Fresh Spinach
1 tsp Olive Oil
2 cloves Garlic
1/2 cup Cherry Tomatoes
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Bring a pot of salted water to a boil and cook whole wheat pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
Meanwhile, pat the prawns dry and season lightly with salt and pepper.
Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
Add the prawns to the skillet and cook for approximately 2 minutes per side until they turn pink and are just cooked through. Remove prawns and set aside.
In the same skillet, toss in the cherry tomatoes and allow them to soften slightly for about 2 minutes.
Add the fresh spinach and stir until just wilted. If needed, splash a little reserved pasta water to loosen the sauce.
Return the prawns to the skillet, add the cooked pasta, and drizzle lemon juice over the top. Toss everything together until well combined and heated through.
