PREPARATION
Preheat the oven to 400°F. Peel and cube the sweet potato, then toss with half the olive oil, a pinch of salt, and black pepper. Spread evenly on a baking sheet and roast for about 20-25 minutes until tender and slightly crispy.
While the sweet potatoes roast, drain and press the tofu. Crumble the tofu into a bowl.
