Enjoy a hearty and vibrant dish combining roasted sweet potatoes, savory chicken sausage, fresh sautéed greens, and fluffy egg whites. This colorful hash brings together caramelized vegetables, lean protein, and aromatic herbs for a delicious meal that energizes your day.
INGREDIENTS
6 oz Chicken Sausage
1 medium Sweet Potato
2 cups Mixed Greens (Spinach & Kale)
3 Egg Whites
1/2 medium Red Bell Pepper
1 small Yellow Onion
1 tsp Olive Oil
1 clove Garlic
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 400°F. Peel and dice the sweet potato into 1/2-inch cubes. Toss with a pinch of salt, pepper, and a few drops of olive oil, then spread on a baking sheet.
Roast the sweet potato in the preheated oven for about 20-25 minutes until tender and lightly caramelized. While the sweet potato roasts, slice the chicken sausage into rounds and dice the red bell pepper and small onion.
Heat a non-stick skillet over medium heat and add the chicken sausage. Sauté for 3-4 minutes until slightly browned. Add diced red bell pepper, onion, and minced garlic. Sauté for an additional 3-4 minutes until the vegetables are softened.
Add the mixed greens to the skillet and cook for another 2 minutes until just wilted.
Pour in the egg whites and gently stir to incorporate, cooking until they are just set. Season with salt and black pepper to taste.
Finally, fold in the roasted sweet potato cubes, mix gently to combine all the components, and heat through for another minute.
Serve warm and enjoy this nutrient-packed hash that beautifully balances flavors and textures.
