Enjoy a flavorful fusion of crispy, seared slices of classic Spam paired with a vibrant garlic-herb roasted broccoli and a light egg white scramble on the side. This dish balances savory, umami notes with a fresh, aromatic broccoli and makes for a satisfying meal any time of day.
INGREDIENTS
2 slices of Spam (approx. 112g total)
6 large egg white equivalents (approx. 198g)
1 cup broccoli, chopped (91g)
1 teaspoon olive oil (4.5g)
1 clove garlic, minced
1 tablespoon mixed fresh herbs (rosemary & thyme)
Salt and pepper to taste
PREPARATION
Preheat your oven to 425°F for roasting the broccoli.
Chop the broccoli into bite-sized florets and toss with olive oil, minced garlic, mixed herbs, salt, and pepper. Spread evenly on a baking tray.
Roast the broccoli in the preheated oven for about 15-18 minutes or until the edges are slightly crispy and tender.
While the broccoli roasts, heat a non-stick skillet over medium heat. Slice the Spam into 2 equal pieces.
Place the Spam slices in the skillet and cook for 3-4 minutes per side until they become golden and crispy.
In a separate bowl, whisk the egg whites lightly with a pinch of salt and pepper. Pour them into a heated, non-stick pan and gently scramble until just set.
Plate the crispy pan-seared Spam alongside the garlic-herb roasted broccoli and a serving of scrambled egg whites. Serve immediately.
