4 oz Salmon Fillet
1 cup Broccoli, chopped
1 large White Potato (approx. 180g)
2 Garlic cloves
2 tsp Unsalted Butter
2 tbsp Plain Nonfat Greek Yogurt
1 tsp Olive Oil
1 Lemon Wedge
Salt and Pepper to taste
PREPARATION
Preheat the oven to 425°F.
Toss the chopped broccoli with olive oil, salt, and pepper. Spread on a baking sheet and roast in the oven for 15-20 minutes until tender and slightly crispy.
While the broccoli roasts, peel and cube the potato. Boil the potato cubes in salted water until soft, about 12-15 minutes.
In a small pan, melt the butter over medium heat and lightly sauté minced garlic until fragrant, about 1-2 minutes.
Drain the potatoes and mash them with the garlic butter and Greek yogurt until smooth. Season with salt and pepper to taste.
