PREPARATION
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into cubes or slabs.
In a small bowl, whisk together soy sauce, maple syrup, minced garlic, sesame oil, and rice vinegar.
Place the tofu in a shallow dish and pour half of the garlic-soy mixture over it. Let it marinate for at least 10 minutes.
Toss the Brussels sprouts (halved if large) lightly with a pinch of salt and a drizzle of the remaining garlic-soy mixture.
