INGREDIENTS
290 grams Wild Atlantic Salmon Fillet
1 cup Green Beans (125g)
1 cup Cauliflower florets (107g)
1/2 teaspoon Olive Oil
1 clove Garlic, minced
Salt and Black Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and freshly ground black pepper.
Heat a non-stick skillet over medium-high heat. Add the salmon, skin-side down if applicable, and sear for about 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes, or until the fish is just cooked through. Remove from pan and set aside.
In the same pan, add the minced garlic with a drizzle (1/2 teaspoon) of olive oil. Sauté briefly until fragrant.
Add the green beans to the pan, tossing with garlic for about 3-4 minutes until they become tender yet crisp.
For the cauliflower mash, steam or boil the cauliflower florets until very soft, about 8-10 minutes. Drain well and mash until smooth. Season with salt and pepper to taste.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Serve immediately.
