Enjoy a perfectly seared salmon fillet served alongside garlicky sautéed green beans and a fluffy bed of brown rice. This wholesome dinner is balanced with lean protein and nourishing whole grains, accented by the rich flavor of olive oil and a hint of garlic.
INGREDIENTS
7 ounces Salmon Fillet
1/2 cup cooked Brown Rice
1 cup Green Beans
1 tbsp Olive Oil
2 cloves Garlic
Salt & Pepper to taste
1 Lemon Wedge
PREPARATION
Rinse and pat dry the salmon fillet. Season both sides with salt and pepper.
Bring a pot of water to a boil and cook brown rice according to package instructions until tender.
In a skillet over medium-high heat, add half of the olive oil. Once hot, place the salmon skin-side down (if applicable) and sear for about 3-4 minutes per side until cooked through and nicely browned. Remove salmon from the skillet and set aside.
In the same skillet, add the remaining olive oil and sauté minced garlic for about 30 seconds until fragrant.
Add the green beans to the skillet and stir-fry for 4-5 minutes until they are tender-crisp. Season with additional salt and pepper if needed.
Plate the cooked brown rice, arrange the garlic green beans on the side, and top with the seared salmon fillet.
Finish with a squeeze of fresh lemon juice over the salmon before serving.
