INGREDIENTS
0.75 cup Egg Whites (182g)
0.5 Chicken Sausage link (40g)
300g Roasted Sweet Potato
1 cup Spinach (30g)
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat the oven to 400°F (200°C). Peel and dice the sweet potato into even cubes. Toss the cubes in a teaspoon of olive oil, and season lightly with salt and pepper.
Spread the sweet potato evenly on a baking tray and roast for about 25-30 minutes or until tender and slightly caramelized, stirring halfway through for even cooking.
While the sweet potato roasts, slice the chicken sausage into rounds.
In a non-stick skillet over medium heat, add the sliced sausage and sauté for 2-3 minutes until they start to brown.
Add the egg whites to the skillet and gently scramble with the sausage.
When the egg whites are halfway set, fold in the spinach and continue cooking until the scramble is just cooked through and the spinach is slightly wilted.
Season the scramble with salt and pepper to taste.
Plate the egg white scramble with chicken sausage alongside the roasted sweet potato for a balanced breakfast.
