INGREDIENTS
3 oz Chicken Sausage x2 (total 6 oz)
1 medium Sweet Potato (approx 150g)
1 cup Fresh Spinach
1/2 medium Red Bell Pepper
1/4 medium Yellow Onion
1 tsp Olive Oil
2 large Egg Whites
PREPARATION
Preheat a large skillet over medium heat and add olive oil.
Slice the chicken sausages into rounds and add them to the skillet. Sauté until lightly browned, about 3-4 minutes.
Peel (if desired) and dice the sweet potato into small cubes. Add them to the skillet along with the chopped red bell pepper and onion.
Cook the mixture, stirring occasionally, until the sweet potato is tender and the vegetables are softened, about 8-10 minutes.
Add the fresh spinach and allow it to wilt into the hash, stirring frequently.
Pour in the egg whites evenly over the hash. Stir gently to combine and cook until the egg whites are set, about 2-3 minutes.
Season with salt and pepper to taste. Serve warm.
